Pork Belly Bites, Mango Salsa & Coconut Rice

I do love winter, but my goodness am I ready for some sunshine now! Desperately grabbing a few minutes here and there while I drink a coffee in the garden just isn't cutting it anymore.


So here's my attempt to bring some sunshine to my kitchen with a really vibrant, spicy mango salsa and jerk(ish) pork belly bites...


 
 

Jerk Pork Belly Bites, Spicy Mango Salsa and Coconutty Rice

Serves 2


For the pork belly:

1 pack pork belly, cut into smaller chunks

1 tbsp jerk seasoning

2 tsp rice vinegar

2 tsp honey

1 tsp olive oil

1 tsp smoked soy sauce


For the mango salsa*:

1 mango, diced

1 red chilli, finely sliced

Juice of 1/2 lime

A lunch fresh coriander, chopped


For the coconut rice:

1 cup rice, rinsed

2 cups boiling water

1 tsp creamed coconut


  1. Marinate the pork belly in the mixture while you prep everything else, if you can leave it for longer in the fridge.

  2. Bring the water to a boil and add the creamed coconut and rice.

  3. In a large pan over a medium heat, add a tiny bit of olive oil and cook the pork belly on all sides. Make sure it's cooked all the way through but don't overdo it!

  4. While everything cooks, simply toss the salsa ingredients together and dish it up on your plates.

  5. Strain the rice, add this to each plate and top with the cooked pork belly - drizzle it with any juices from the pan.




*I would usually dice an avocado to go in the salsa, but I forgot to pick one up! This works fine on its own but you can add the avocado for a creamy element if you prefer.
