Ingredients:
200ml Heavy Whipping Cream
2-4tbsp Pistachio Cream
4 Meringue Nests
Fresh Raspberries, Halved
Pistachios, Crushed For Sprinkling
Honey For Drizzling
Method:
Put the cream in a bowl and add the pistachio cream - start with 2tbsp and check the flavour, if you want more feel free to add it.
Whisk the cream until it thickens to medium peaks. Keep in the fridge while you prep everything else, like crushing your pistachios.
Put the cream in to a piping bag. To assemble your pavlova, start with a meringue nest and pipe the pistachio cream on top. Then, place some raspberries on the top and sprinkle with some crushed pistachios.
If you're serving immediately, drizzle with honey. However, these will keep in the fridge overnight if you want to get-ahead, but don't add the honey until you serve.
Freeze dried raspberries also make a stunning sprinkle for the tops of your meringues!
