How do you like your pancakes? Sweet or savoury? Thick or thin?
I'll be honest, pancake day completely snuck up on me this year. At no point did it factor in to my brain until just yesterday when my husband reminded me! We weren't sure we'd bother, but caved for some tasty sweet pancakes.
I used the BBC Good Food recipe for fluffy American pancakes and topped mine with a sort of cherry compote...
Yuzu Cherry Compote
Handful of cherries, pitted & cut in half
About 100ml water
2tsp sugar
1tsp Yuzu juice
Heat the cherries in a little pan for a few minutes on their own, until they begin to soften
Add the sugar and water, bring to a boil and then reduce to a simmer for around 10 minutes.
As the sauce begins to reduce and thicken, add the yuzu juice and stir.
Serve over pancakes, French toast, ice cream... anything that requires zesty, syrupy cherries!
