Personally, I love Brussel Sprouts! Admittedly, they can sometimes be on the bitter side, but this recipe really helps to alleviate that.
A few simple ingredients can completely transform these cruciferous green balls into a delightful salty and sweet side dish. I promise!
Sweet & Salty Brussel Sprouts
Ingredients:
200g Brussel sprouts
1 pack lardons or pancetta (or bacon, or even a couple of sausages)
Honey
Pinch of walnuts, crushed
Method:
Halve the brussel sprouts and remove any bad bits with a knife. Blanch them in boiling water for a few minutes – we just want to soften them slightly, not completely cook them. Let them steam dry.
In a frying pan over a medium-high heat, cook the lardons/pancetta. This should release some fat to the pan and, as the meat begins to cook, you can add your sprouts to the pan, flat side down.
As they start to char on the underside, you can flip them over and give everything a good shake to loosen anything stuck to the bottom. Drizzle the pan with a little honey – this is what will balance some of the bitterness from the sprouts. Sprinkle with the crushed walnuts and toss to combine.
Serve alongside your Sunday roast or Christmas dinner and genuinely enjoy sprouts!
