My Christmas Turkey is still keeping us going! We ate loads on Christmas Day, had leftovers on Boxing Day, and froze about 6 double portions... there was a lot of turkey!
We've used about half now, some in simple pasta recipes. The first proper recipe I used it for was a pie, but this one is even easier. A turkey chilli packed with spice and flavour. You could easily swap the turkey out for leftover chicken, too.
Slowcooker Turkey Chilli
Ingredients:
300g leftover turkey or chicken meat
1 red onion, diced
1 tin beans (I used a leftover mix of sweetcorn, kidney beans and black eyed peas)
1 sweet potato, diced
1 tin chopped tomatoes
100ml water
1 tbsp bbq sauce
1 tbsp Chilli Marmite
1 tsp oregano
1 tsp paprika
1/2 tsp cumin
Chilli flakes, if desired
Pinch salt and pepper
Method:
Add everything to the slow cooker and leave it on low for 6-8 hrs, or high for 4.
You can cook the onion and sweet potato in a pan first, but it worked perfectly well without!
