This simple sausage stew recipe is cheap to make and perfect for batch cooking. It uses onions, carrots and peppers and is loaded with paprika for a deliciously warm flavour.
Similar to a goulash, but simplified for my student friends x
Sausage Stew Recipe
Serves 2 on its own or 4 with a side of mash or rice
Ingredients
2 carrots, peeled & diced
2 bell peppers, diced
1 onion, diced
4-6 sausages, sliced
400g tin chopped tomatoes
1/2 stock cube
2tbsp paprika
Salt, pepper, oil
Method
Heat a big frying pan on a medium-high heat and add your sliced sausages. Let them brown and when there is no raw meat exposed, add a little oil and your onions.
Once the onions begin to soften, pop the carrots and peppers in the pan.
Apply heaps of paprika - I’ve given 2tbsp as a guide, but you can adjust to more or less depending on your personal preference. Give it a good stir to make sure everything is coated.
Open your tin of tomatoes and add these to the pan. Then, in the empty tin, fill it almost all the way with water and add that too. This way, you rinse out every bit of the tomatoey flavour!
Once the mixture is bubbling away, reduce the heat and let it simmer. The sauce will reduce - meaning the liquid will cool off and it will thicken. Keep an eye on it and once it reaches your preferred consistency, it’s ready to serve.
If you forget about it for a moment and it thickens too far - just add a splash more water and it will get runnier again. Don’t panic!
